I recently signed up to a Good Food Box in my city. In my box this week I received a head of broccoli and given that stir-fry beef strips were on sale at the grocery store this week, it was an easy decision of what I was going to do with my broccoli! This is a tried and true go-to recipe of mine and a slightly tweaked version of the one my mom used to make growing up to align with my Minimalist Pantry. As I had 1/2 a cauliflower leftover in the fridge, I decided to serve it with cauliflower rice. Usually, I would have it with either rice or noodles. Some tips for this recipe:

  • If you have a carnivore in your household you could double the amount of beef in the recipe. The pack of beef that I bought was actually 0.5kg, but I froze half to use another time.
  • I like this recipe as it is very versatile. Sometimes I will add some other vegetables to this recipe like mushrooms or red pepper. I have even thrown in black beans when I have some leftover from another meal earlier in the week.
  • My mom taught me that if you keep ginger root in the freezer it grates so much easier than fresh. Not only does this save on food waste but it really is a lot easier to grate the frozen ginger (I usually let defrost for just a few minutes before grating).
  • As for the sauce – heads up that it is fairly thin so if you prefer a thicker sauce you may want to add some corn starch to thicken.
  • For the servings below I noted that it serves two to be on the safe side. However, I usually get dinner and at least two days of leftovers from this recipe.

Easy Beef and Broccoli Stir Fry

A simple beef and broccoli stir fry made with items from the Minimalist Pantry plus beef and broccoli!

Equipment

  • Frying pan or wok
  • Cutting board
  • Knife
  • Grater (zesting size or a microplane)

Ingredients

  • 0.5 lb Beef strips (~0.25kg)
  • 1/2 Yellow onion* Diced
  • 4 cloves Garlic* Minced
  • 3 Carrots* Coined
  • 1 head Broccoli Cut into florets
  • 1/3 cup Low sodium soy sauce*
  • 2 tbsp Brown sugar*
  • 3 tsp Ginger* Grated
  • 1/4 tsp Red Pepper Flakes*
  • 1 tbsp Sesame oil (optional: can use any oil)*

Instructions

Ingredients = Minimalist Pantry Items (*) +

  • Beef and broccoli

Prepare

  • Dice the onion, peel and coin the carrots, chop the broccoli into florets
  • Cut beef into thin strips if not purchased as stir-fry strips
  • Mince the garlic and grate the ginger

Cook

  • Combine the soy sauce, brown sugar, ginger, garlic, and red pepper flakes. Stir well.
  • Heat oil in a large fry pan or wok on medium-high heat. Add onion and sauté for 3 minutes.
  • Add beef to the pan and let cook 3-5 minutes until no longer pink.
  • Add the broccoli, carrots and stir. Add the sauce and mix together well.
  • Let cook an additional 12-15 minutes until the broccoli and carrots are fork tender.

Eat

  • Serve beef and broccoli stir fry with noodles, rice, or whatever else your heart feels like!
